This simple French toast recipe only takes ten minutes to prepare and will be a favourite amongst children and adults. Our serving suggestion? Cuddled up in bed on those days between Christmas and the new year.
Makes enough for six
What you’ll need
- 30g unsalted butter, plus extra for greasing
- Soft bread loaf / sweet bread loaf (approx. 450g), torn into 2–3cm pieces
- 6 large eggs
- 240ml double cream
- 400ml whole milk
- 2 tsp vanilla extract
- 2 tsp ground cinnamon
(optional)
- 1 tbsp icing sugar, for dusting
- Greek yogurt & fresh blackberries for serving
What to do
- Preheat the oven to 180°C, and lightly grease a 9×13inch baking dish with butter.
- Tear the bread into chunks and scatter evenly in the dish.
- Whisk eggs, double cream, milk, vanilla, and cinnamon together until smooth.
- Pour the mixture over the bread, and press down lightly so the bread soaks up the custard, and bake for around 45–60 minutes, until golden brown and set in the middle.
- Serve warm, finished with a few spoonfuls of Greek yogurt, fresh blackberries and dusted with icing sugar.
You could always...
- Assemble the night before; refrigerate overnight and bake in the morning.
- Use leftover Brioche or Pandoro as a good substitutes for bread.
- Store leftovers in the fridge for up to four days and reheat before serving.
